To finish my wellbeing newsletter, I had to include this really fantastic homemade granola recipe.  I got it from the rather brilliant Harriet App which is an app I subscribe to for live Pilates sessions, mindfulness, healthy recipes and nutritional advice.  Harriet is a Pilates instructor and nutritionist who has created this app and runs a live class every day of the week (excellent by the way - you can find out more about it HERE). 

A lovely lady called Carlie devises all the recipes and has given me permission to share this with you.  I love granola and eat it most days but one can never be sure how much sugar or other potentially unhealthy ingredients are in shop-bought versions so when I saw this I thought I would try it and I haven’t looked back - absolutely delicious and I know exactly what’s in it!

INGREDIENTS
 
100g Oats
25g Quinoa Flakes
100g Chopped Nuts
50g Flaked Almonds
50g Mixed Seeds (Pumpkin, Sunflower, Flax, Chia, etc)
1tsp Cinnamon
3 x Egg whites
1tsp Vanilla Extract
Pinch of Salt
 
METHOD
 
Prepare a baking tray with non-stick baking paper.
Pre-heat the oven to 150C.
Mix all the dry ingredients together thoroughly.
Whisk egg whites until they form stiff peaks, add all the dry ingredients and vanilla extract until fully coated (you could add some sugar to the egg whites while whisking if you can't live without it)
Spread out on the prepared baking tray.
Bake for 40 minutes but check halfway through and break up/turn over where necessary.
Leave to cool before placing in a jar or airthigh container.
Serve with yoghurt, berries, or any fruit for sweetness (I've put mine with some roasted rhubarb)
